Fan (convection) ovens move hot air, so recipes commonly lower the temperature by about 20 °C (25 °F). Oven thermostats vary; an oven thermometer shows the real temperature.
Formula and gas marks
°F = °C × 9/5 + 32 and °C = (°F − 32) × 5/9. Common settings: 160°C = 325°F (gas 3), 180°C = 350°F (gas 4), 190°C = 375°F (gas 5), 200°C = 400°F (gas 6) and 220°C = 425°F (gas 7). Recipes usually round to the nearest 5 or 10 degrees.
Fan (convection) ovens
Fan ovens cook faster, so recipes usually suggest about 20°C or 25°F lower than a conventional oven. Many ovens run hot or cold; an oven thermometer is the easiest way to check yours.
